Primavera Weather is our seasonal celebration of Ethiopian coffee—bright, expressive, and crafted to capture the feeling of endless spring and summer days. Built from a carefully balanced blend of washed and natural Ethiopian coffees, it combines delicate floral aromatics and juicy sweetness with vibrant fruit character and depth.
The washed component brings clarity, structure, and elegant floral notes, while the natural coffee contributes ripe berry flavors, stone fruit sweetness, and a lush mouthfeel. Together, they create a cup that is lively, balanced, and greater than the sum of its parts.
Approachable yet complex, Primavera Weather opens with a fragrant floral aroma, unfolds into notes of mixed berries and stone fruit, and finishes with a sweetness reminiscent of sweet tea. Ethiopia is widely regarded as the birthplace of coffee and remains one of the world's most celebrated producing origins. High elevations, heirloom varieties, and diverse processing methods contribute to coffees known for their floral aromatics, vibrant fruit character, and remarkable complexity.

Primavera Weather is built around our appreciation for the contrast between washed and natural Ethiopian coffees. Each harvest, we select coffees that showcase the best characteristics of both processing methods and combine them to create a balanced and expressive cup profile.
The washed component provides structure, clarity, and floral elegance, while the natural component contributes sweetness, body, and layered fruit notes. By carefully adjusting the ratio between the two, we create a coffee that remains vibrant, seasonal, and true to its origin.
VARIETY — MIXED HEIRLOOM SELECTIONS
This blend is composed of traditional Ethiopian heirloom varieties selected for their complexity, sweetness, floral aromatics, and fruit-forward character. Together they contribute depth, clarity, and balance while preserving the distinct identity of the region.
PROCESS — WASHED & NATURAL
Primavera Weather combines two distinct processing methods that work together to create a dynamic and layered cup experience.
Washed coffees are carefully depulped, fermented, washed, and dried to emphasize clarity, structure, and floral expression. Natural coffees are dried inside the fruit, allowing sugars and fruit compounds to interact with the seed throughout fermentation and drying, resulting in pronounced berry notes, tropical fruit character, and enhanced sweetness.
The combination of these processes creates a cup that is both vibrant and refined.
DRYING — RAISED-BED DRIED
Both components are dried on raised beds, promoting even airflow and consistent moisture reduction. This traditional drying method helps preserve aromatics, stabilize the coffee, and maintain clarity and sweetness in the final cup.

Moderate Light roasting is designed to preserve the coffee's natural fruit character, floral aromatics, and vibrant acidity while developing sweetness and balance.

Roast color is measured using an Agtron M Basic III spectrophotometer and reported on the Agtron Gourmet Scale. Readings are calibrated regularly to ensure consistency and accuracy.
Our roasting philosophy focuses on showcasing origin character rather than roast influence, allowing the coffee's unique attributes to remain at the forefront.
DEVELOPMENT
Our roast categories describe development rather than darkness. Through careful management of time and temperature, we balance sweetness and acidity while preserving the coffee's vibrant and expressive character.
